Spicery’s Long Drink list mixes the new with the ever faithful Singapore Sling(gin, Triple Sec, Dom Benedictine, lime juice, pineapple juice, grenadine syrup top w/soda water), Pina Colada ( rum, dark rum, Malibu, pineapple juice, coconut cream) and, of course, Margaritas (Tequila, Triple Sec, lime juice). At the Martini Bar treat yourself to the deliciously divine Chill Out Martini (vodka, Malibu, bailey’s, orange juice) or the refreshing Apple Melon Martini (vodka, apple juice, midori melon, lime juice). Life is sweet!

Spicery’s menu is a gastronomic delight in itself. Delicious servings from the deep blue sea include Spicery Sea Food Salad (smoked salmon crostini, steamed prawns, avocado and mixed leaves in a lemon caviar dressing), Char Grilled Deep Water Squid (chili, garlic lemon oil and Mediterranean vegetables), Pacific Strait Sardines (slow cooked in olive oil, bay leaf & long black pepper) and Grilled King Prawns pil pil (with Marakesh spicy remoulade and lemon wedges). The strongly influenced Mediterranean cooking crossed with Bali’s finest organic ingredients, which is the heart of VIVAI’s kitchen, and using only the freshest catch of the day was designed by Chef Dean. Early morning trips to Jimbaran Bay for fresh catches of the day, buying herbs and lettuce straight after pickings from Bedugul, tomatoes from Bangli and foraging for Bali’s more exotic ingredients like cacao pods, bourbon vanilla beans, zucchini flowers and malingo berries ensures a rich variety of tastes on your palate.
